The invention relates to a method of stabilising phycobiliproteins in an aqueous extract to which an excipient containing ascorbic acid is added in order to protect same from, in particular, photodegradation processes. The aqueous extract can be a cell extract obtained from algae and/or cyanobacteria. Certain algae and all cyanobacteria contain supernumerary protein pigments, phycobiliproteins. Phycobiliproteins stabilised with ascorbic acid can be used in cosmetic, nutraceutic or pharmaceutical compositions. In addition, phycobiliproteins stabilised with ascorbic acid can be used as colouring agents and/or an antioxidants. |
