It is intended to provide a process for producing a dipeptide characterized by comprising using, as an enzyme source, an optionally treated culture of a microorganism capable of producing a dipeptide from a diketopiperazine composed of two types of α-amino acids fused together, supplying the enzyme source and a diketopiperazine composed of one or two types of α-amino acids fused together to an aqueous medium, thus inducing the formation and accumulation of the dipeptide in the aqueous medium, and then collecting the dipeptide from the aqueous medium (provided that the case where the diketopiperazine is a diketopiperazine composed of aspartic acid and phenylalanine fused together and the dipeptide is aspartylphenylalanine is excluded). |
