abstract | A polyglycerol fatty acid ester, characterized in that 70 wt % or more of the constitutional fatty acid thereof is palmitic acid and 1 wt % solution thereof in a 7 wt % aqueous Na2SO4 solution exhibits a clouding point of 55 to 100°C. The polyglycerol fatty acid ester exhibits excellent ability for an O/W type fine emulsification even under an acidic condition, has good taste, and is suitable for forming an emulsified or solubilized composition exhibiting high stability at a low temperature. |
