abstract The aim of the invention is to use a product resulting from the processing of oleaginous vegetable compounds for sterol recovering. The aim of said invention also is a method for recovering sterols contained in the oils of the oleaginous vegetable compounds. Said method is embodied, in particular in the form of a method for recovering from a product resulting from a processing in which an oil is exposed to an interesterification stage. The inventive method is particularly suitable for recovering phytosterols.
