abstract |
Polyglycerols significantly reduced in the content of polyglycerols having a cyclic structure formed by the removal of a water molecule from the polyglycerol molecule; and a polyglycerol/fatty acid ester having excellent surface activity. Two moles or more of glycidol and a catalyst are gradually added to and reacted with 1 mol of glycerol to obtain polyglycerols in which the ratio of the sum of polygylcerols (1) to the sum of polyglycerols having a cyclic structure (2) is (70% or more)/(30% or less) (the total of both is 100 wt.%) in terms of intensity ratio as determined by liquid chromatography/mass spectrometry and which have an average degree of polymerization <n> of 2 or higher. Reacting the polyglycerols with a fatty acid gives the corresponding polyglycerol/fatty acid ester. |
