abstract The invention relates to a method for obtaining the endopolygalacturonase enzyme by means of cultivating recombinant microbial strains overexpressing gene epg2 of Kluyveromyces marxianus. Disclosed is the cloning and sequencing of gene EPG2 and the construction of yeast strains producing and secreting the endopolygalacturonase enzyme in large amounts and in a very stable manner. The produced enzyme can be used in the depectinization of fruit juice, vegetables and garden produces, the maceration of vegetables and for increasing juice yields, animal feed formulation and the degradation of vegetable residues.
