abstract |
A method of reaction for yielding 2-O-α-D-glucopyranosyl-L-ascorbic acid. In this method, 5-O-α-D-glucopyranosyl-L-ascorbic acid and 6-O-α-D-glucopyranosyl-L-ascorbic acid are not generated or are generated in such a small amount that the generation of these cannot be detected. Also provided is a process for producing 2-O-α-D-glucopyranosyl-L-ascorbic acid which employs the reaction method. The process for producing 2-O-α-D-glucopyranosyl-L-ascorbic acid is characterized by causing an α-isomaltosyl glucoglucide-producing enzyme or a combination of an α-isomaltosyl glucoglucide-producing enzyme and cyclomaltodextrin glucanotransferase (EC 2.4.1.19) to act on a solution containing L-ascorbic acid and α-glucosyl saccharide compound to yield 2-O-α-D-glucopyranosyl-L-ascorbic acid and collecting it. |
