A method of the transesterification of a fat or an analogue thereof with an enzyme, characterized in that the fat or analogue as a substrate is one or more members selected among fats (triglycerides), fatty acids, and fatty acid esters and the substrate has an acid value of 8 to 30. By the method, the generation of undesirable by-products is inhibited and a target triglyceride of high quality is stably obtained. |
