abstract The invention concerns a stable emulsion of a non-miscible fluid and an aqueous phase with specific pH. The emulsion is optimized in that it comprises an ionic surfactant and a polyampholytic polymer whereof the charge is pH-dependent. The respective amounts of surfactant and polymers are determined on the basis of the charges. It is possible to adjust by pH control the stabilization or destabilization of the emulsion. The invention also concerns a method for stabilizing and destabilizing an emulsion comprising a surfactant combined with an ampholytic polymer.
