abstract The invention provides a method of producing, in a plant, oil having an erucic acid content above 66 % erucic acid, the method comprising (i) expressing in the plant nucleic acid encoding an elongase and nucleic acid encoding an acyltransferase enzyme; and (ii) extracting oil from the plant. Corresponding plants seeds and oils are also provided.
