A process for producing a fat comprising a triglyceride having a medium-chain fatty acid bonded in each of the 1-position and 3-position and a highly unsaturated fatty acid bonded in the 2-position, which comprises causing a lipase fixed to a porous ion-exchange resin support having a pore diameter of about 100 Å or larger and specifically acting on the 1- and 3-position ester bonds to act on a mixture of a medium-chain fatty acid derivative and a starting-material fat which comprises at least one highly unsaturated fatty acid selected from the group consisting of omega-6 highly unsaturated fatty acids having 18 or more carbon atoms and 3 or more double bonds and omega-9 highly unsaturated fatty acids having 18 or more carbon atoms and 2 or more double bonds but contains no omega-3 highly unsaturated fatty acids; a fat or triglyceride obtained by the process; and a use thereof in a food, feed, and medicinal composition. |
