A novel method is described for selectively precipitating casein fractions from skimmed milk or caseinates by the addition of calcium salt at alkaline pH. In particular, the invention describes a process with allows casein to be fractionated to yield two fractions of αs-casein and β-casein and, for the first time, preparation of material highly enriched in λ-casein. The λ-casein can be further processed to manufacture pure CMP, which can be used as nutrition for sufferers of the metabolic disease phenyalketonuria. |
