abstract |
In case of deamidating milk protein by using a deamidation enzyme which directly acts on amido groups in a protein without cleaving peptide bonds or crosslinking the protein, a method of improving the deamidation ratio and the deamidation speed; and a method of enzymatic denaturation of milk protein. Preliminarily denatured milk protein is deamidated by treating with a protein deamidation enzyme which directly acts on amido groups in a protein having a molecular weight of at least 5000 without cleaving peptide bonds or crosslinking the protein. Milk protein is denatured by using this enzyme too. |
