Enzymes capable of having enzymatic activity at high salinities. Specifically there is provided novel xylanolytically, mannanolytically, lipolytically and amylolytically active halotolerant, or halophilic enzymes which i.a. are useful in the manufacturing of food products, animal feedstuff and other polysaccharide containing materials. Source organisms for such enzymes include halotolerant or halophilic Bacteria and Archaea species such as proteobacterial species including Proteobacteria species, Bacillaceae species including'Gracilibacillus' species andArchaea species such as Euryarchaeota species including Halobacteriaceae species e.g.'Halorhabdus' species. |
