abstract A method is described for preparing, from various fruits and vegetables, including cranberries and other members of the genus Vaccinium, a juice that is relatively enriched for beneficial compounds. The method can be used to produce a juice, e.g., cranberry juice, enriched in beneficial health factors, e.g., factors which inhibit bacterial adhesion. Other beneficial health factors in fruits and vegetables, which are not fully recovered by conventional processing methods, may include, e.g., compounds that lower cholesterol, reduce the risk of various cancers, or reduce the risk of heart disease.
