abstract A gelling composition comprising a blend of an alginate (A), a hydrocolloid (B) and a galactomannan (C), wherein the ratio by weight of A:(B+C) is about 0.1:1 to about 1.5:1 and the ratio by weight of B:C is about 0.8:1 to about 1.2:1. A gel composition employing the gelling composition of this invention and a food product comprising one or more food ingredients and the gelling composition described above is also disclosed.
