abstract The invention concerns a method for fractionating a source of fats comprising the following steps: a) transesterifying the source of fats in an alcoholic medium in the presence of a basic catalyst; b) separating the two phases resulting from the transesterification; c) optionally recuperating the protein flour from the upper phase; d) neutralising the remainder of the upper phase with an acid to precipitate the catalyst; and e) distilling the neutralised phase and decanting the distillate to separate the glycerol fatty acid esters. The invention also concerns fatty acid esters, protein flours, protein fibres and glycerol obtainable by said method.
