An additive is proposed to supplement iron intake, comprising iron (II) bioavailable in aqueous medium, encapsulated in liposomes. Said medium comprises reducing agents, such as ascorbic acid or its salts as a stabilizer of the reduced state of iron. A process for preparing bioavailable iron-bearing liposomes from iron (II) salts and phosphoglycerides in aqueous medium is proposed. Procedure to prepare liposomes, characterized in that it comprises forming a homogeneous suspension of phosphoglycerides in water and thawing the suspension formed at room temperature, in cycles and repeated at least twice, of fast freezing and slow thawing, incorporating the homogenized and thawed suspension, iron (ll) in aqueous solution that includes reducing agents, capable of inhibiting the oxidation to iron (ll) repeat slow freezing and thawing and separating the liposomes formed. |
