A recombinant DNA segment comprising a human milk protein encoding gene; a promoter sequence directing the transcription of the gene, where the promoter sequence is different from the promoter sequence for the gene in the human organism; and a terminator site for the human milk protein encoding gene. A microorganism containing a recombinant DNA segment comprising a human milk protein encoding gene; a promoter sequence directing the transcription of the gene; and a terminator site for the gene.
