abstract There is disclosed a method of preparing sunflower butter from dehulled sunflower seeds by treating said seeds with a solution of any one of ascorbic acid, erythorbic acid, hydroquinone, formaldehyde, ascorbyl palmitate or tartaric acid. The treatment avoids discoloration of the sunflower butter prepared from said treated sunflower seeds.
