The process including the steps of admixing with a heated aloe vera gel the antioxidant effective to prevent oxidation of said gel, adjustment of the gel to a pH in the range of from about 3.0 to about 3.5 and cooling the admixed gel to 23° C. or lower in less than about 15 minutes.
