abstract Disclosed are starch compositions comprising starch and at least 0.1% by weight based on said starch of a sodium, potassium, calcium or magnesium salt of a monoalkyl fumarate or maleate having from 14 to 18 carbon atoms in the alkyl group, which are useful as film-forming agents, as starch adhesive compositions and as starch-based thickening agents. Preferred embodiments include the use of sodium monostearyl fumarate and sodium monostearyl maleate.
