abstract A VITAMIN ENRICHED, DEHYDRATED POTATO FLAKE PRODUCT IS DESCRIBED HEREIN. THE POTATO FLAKES ARE IRREGULAR IN SHAPE HAVING A THICKNESS RANGING FROM 0.005 TO 0.015 INCHES AND A DIAMETER OF APPROXIMATELY / TO / INCH. VITAMIN FLAKES OF APPROXIMATELY THE SAME SIZE ARE INCORPORATED WITH THE POTATO FLAKES AND ARE NONSEGREGATING AND DIFFICULT TO DETECT VISUALLY. THE VITAMIN FLAKES COMPRISE FROM 50% TO 75% FAT WHICH HAS A MELTING POINT OF FROM 110* F. TO 165* F. AND ALKYL CHAIN LENGTHS CONTAINING FROM 6 TO 26 CARBON ATOMS. WATER-SOLUBLE VITAMINS AND MINERALS MAKE UP THE REMAINDER OF THE FLAKES AND ARE INCORPORATED IN AND ENCAPSULATED BY THE FAT.
