abstract A novel converting starch product comprising a starch base which is admixed with a modifying agent, aqueous dispersions of which product display a high viscosity when first gelatinized but upon being cooked at retort temperatures are converted resulting in a dispersion exhibiting a substantially reduced viscosity. Such starch products find a particular use in the commercial preparation of foods.
