abstract A pudding mix composition includes, in combination with an amylaceous ingredient, a lipid ester surface active agent. The preparation of a cooked pudding therefrom is considerably simpler and is more tolerant of recipe preparation errors in that the tendency of the pudding to stick to the pan and to scorch the pan during preparation is reduced or eliminated.
