Food additives are proposed that containn (a) glutaminic acid and (b) at least one nucleotide or the alkali metal and/or alkaline earth metal salts thereofn nand also optionallyn (c) aroma substances selected from the group formed by purines, polyphenols, 2-acetylpyrazine, 3-methylbutanol, 2-phenylethyl acetate, trimethylpyrazine and also mixtures thereof, (d) table salt, (e) sweeteners and/or (f) acidulants. |
