abstract An object of the present invention is to provide a novel plant-derived pigment compound, which is a pigment compound represented by Formula II: n n n n n n n n n n (wherein R 1 to R 3 independently represent a hydroxyl group or an alkoxy group having 1 to 4 carbon atoms, and R 4 and R 5 independently represent a hydrogen atom, an acyl group having 1 to 4 carbon atoms, or an alkyl group having 1 to 4 carbon atoms). The compound is a yellow pigment extracted from the endosperm or the like of the rice cultivar “Hatsuyamabuki.”
