abstract | The object of the present invention is to provide a fatty acid composition whose fatty acid rate differs from that previously reported. n The above object is achieved by a fatty acid composition obtained by culturing a host which is transformed with a recombinant vector carrying a nucleic acid comprising the nucleotide sequence of SEQ ID NO: 1 or a nucleotide sequence encoding a protein having the amino acid sequence shown in SEQ ID NO: 2 or a mutant functionally equivalent to the nucleic acid, wherein at least one or more of i) to v) shown below:n i) the oleic acid content; ii) the ratio of the oleic acid content to the palmitic acid content; iii) the ratio of the total content of stearic acid and oleic acid to the palmitic acid content; iv) the ratio of the total content of stearic acid and oleic acid to the total content of palmitic acid and palmitoleic acid; and v) the n-6 fatty acid contentn nis higher in the fatty acid rate of the fatty acid composition than in a cultured product obtained by culturing a host which is not transformed with the recombinant vector. |
