abstract The present invention relates to a process for the manufacture of a composition containing at least one xantophyll selected from the group consisting of lutein and zeaxanthin, said process comprising the steps of: providing an extract of Marigold flower containing the xantophyll(s) in esterified form; saponifying the Marigold flower extract and isolating the xantophyll(s). The process according to the invention is characterized in that the step of saponifying the Marigold flower extract is carried out in the presence of a quaternary ammonium base.
