abstract A microorganism isolated from soil was identified as being a Lactococcus lactis strain (NRRL B-30656) which produced an extracellular transferase enzyme when grown in a medium containing sucrose. This produced a glucose and fructose biopolymer on being purified and placed in a medium with sucrose in suitable temperature and pH conditions.
