A method of obtaining an analogue of sturgeon caviar in the form of capsules consisting of two phases: internal, containing calcium salt, polysaccharide, oil material in the form of an emulsion, and external, containing calcium alginate and dye, which are obtained by feeding the internal phase with drops into an aqueous solution of sodium alginate . Before encapsulation, ferric chloride at a concentration of 0.1-0.4% is added to the internal emulsion, and tannins at a concentration of 0.25-1.0% or solutions containing tannins are added to the sodium alginate solution. In order to give the capsules green and brown tones, the pH of the emulsion is changed in the range of 4.7-6.5 due to the introduction of polyphosphates. |
