abstract | The method of obtaining enzymatic hydrolyzate based on fish proteins involves the preparation of protein mass from fish waste, hydrolysis with simultaneous heating with stirring. Pre-protein mass of fish waste is washed in alkaline solution to remove water-soluble proteins and degreasing. Fish is used as fish waste by the innards and pruning of fish. The hydrolysis is carried out at a temperature of 40-45 ° C for 4-6 hours in a solution of acetic acid in the presence of an enzyme preparation, followed by alkalisation of the obtained mass with a solution of sodium carbonate Na2CO3 to pH 6.5-7.0, separating the precipitate formed and clarifying the hydrolyzate. |
