| abstract | The invention relates to a method for the production of proteins from natural mixtures of substances, which includes the following stages: A) providing a starting material that is a natural seed / fruit mixture having a hard, capable of grinding husk, which are seeds of legumes / fruits, sunflowers and / or rapeseed, in the form of a mixture of substances from whole seeds or from already partially defatted seeds, and / or filter-sludge, which remains as a residue after extraction of the oil during the pressing of the oil in the previous stage; B) if the mixture of substances in stage A) has not yet been crushed: grinding of a mixture of substances, in which in each case, the husk is disintegrated; C) dispersing the crushed mixture of substances from stage A) or B) with water, where the water and crushed mixture of substances are mixed in such a way as to obtain a free-flowing mass and / or dispersion; D) bringing the pH of the free-flowing mass and / or dispersion obtained in step B) to an alkaline pH level greater than 9.5; E) adding to the mass obtained in step D) a water-soluble organic solvent which is alcohol after adjusting the pH of the mass in stage D); in such a way as to achieve an alcohol concentration of less than 30% to separate the husk from the seed / fruit endosperm; E) separation of the solid phase having the predominant husk fraction; (G) bringing the pH of the mass obtained in step E) and released from the husk to a pH of from 4.5 to 7.2; C) separation of the husk-free mass from stage G) into a plurality of phases, where one of these phases is the protein concentrate phase. The resulting protein concentrate phase is dried with a powder mill to form a powder. |
