The invention relates to an oil composition comprising a component of a transesterified structured lipid and one or more components selected from phytosterol ether and additional edible oil; moreover, the component of the structured lipid is the product of the reaction of the transfer of the transesterification reagents, the loading of the reagents, including the amount of medium-chain triglyceride containing fatty acid chains from C6 to C12 in length, the amount of long-chain household oil containing fatty acids and the number of acidic chains16 in which the source of stearidonic acid is echium oil, and the amount of echium oil is approximately 20-40 weight percent, based on the total weight of reagents loading; and a method for producing a transesterified structured lipid that is part of such a composition. |
