abstract | The method of obtaining a bacterial starter culture provides for the joint cultivation in milk of bifidobacteria of the Bifidobactcrium langum species, acetic acid bacteria of the Acetobacler aceti and Acelobacter pasteurianus species, the subsequent combination of the combination with lactic acid bacteria. The starter culture additionally contains strains of propionic acid bacteria Propionibacterium freudenreichii and Propionibacterium acidipropionici, selected for their vitamin-synthesizing properties and antagonistic activity against potentially pathogenic microorganisms. Of bifidobacteria, strains of the species Bifidobacterium bifidum are additionally used. In this case, the previously obtained symbiosis of lactic acid and acetic acid bacteria is combined with the symbiosis of bifidobacteria, propionic acid and acetic acid bacteria in a ratio of 1: 3. |
