The invention relates to biotechnology and is a strain of lactobacilli, which are used in the production of protective cultures for hard rennet cheese. The strain Lactobacillus plantarum IMB B-7371 has a pronounced antagonistic effect against Clostridium tyrobutyricum and other conditionally pathogenic microorganisms, moderate acid formation energy in milk, and good milk clot syneresis, technologically stable.
