abstract | The invention provides a preparation method of lactulose oligosaccharide, comprising the steps of: providing a reaction substrate consisting of sucrose and lactose. Next, a hydrolysis process is provided, which comprises adjusting the pH of the reaction substrate, adding fructan sucrase to the reaction substrate to obtain a hydrolysis reaction substrate, and reacting the hydrolysis reaction substrate at a hydrolysis temperature for a hydrolysis time to obtain a hydrolyzate. Further, a polymerization and trans-fructose-based process is provided, which comprises adjusting the pH of the hydrolyzate, and adding fructanose invertase to the hydrolyzate to obtain a polymerization and trans-fructose-based reaction substrate, and polymerizing and transferring the fructose-based reaction substrate. A polymerization and trans-fructose-based temperature reaction-polymerization and trans-fructose-based time to obtain a reaction solution containing lactulose oligosaccharides. |
