A high oleic soybean oil having high oxidative stability which comprises a C18:1 content of greater than 75% of the fatty acid moieties in the oil, a combined C18:2 and C18:3 content of less than 10% of the fatty acid moieties in the oil, and an active oxygen method induction time of greater than 50 hours wherein said oxidative stability is achieved without the addition of an antioxidant. |
