abstract A method of producing calcium pyruvates is described, in which calcium salts of organic acids or acidic organic keto or hydroxy compounds are reacted with pyruvic acid at a temperature in the range from -20 to +120 DEG C, if necessary in the presence of a solvent or diluent. In this way, high-purity calcium pyruvates are obtained which can be largely free of water and have a very long shelf life.
