abstract |
The present invention provides a novel method for suppressing coloration capable of suppressing coloring of a frying oil composition, and a frying oil composition having suppressed coloring. A citric acid ester is added to a frying oil composition to suppress coloring of the frying oil composition. The citric acid ester is preferably selected from isopropyl citrate, triethyl citrate and citric acid monoglyceride. |
