abstract |
[Problem] The subject is to provide a body phenol compound reducing agent and a food and drink for reducing the body phenol compound containing the same. [Solution] The in vivo phenol compound reducing agent comprising a branched α-glucan mixture having the following characteristics (A) to (C) as an active ingredient, and an in vivo phenol compound reducing agent containing the same Food and beverage to solve the above problems: (A) uses glucose as a constituent sugar, and (B) has a non-position at one end of a linear glucan with a degree of glucose polymerization of 3 or more connected through an α-1,4 bond. A branching structure with a degree of polymerization of glucose of 1 or more connected to a terminal glucose residue through a link other than the α-1,4 bond is reduced. (C) isomaltose is digested by isomaltoglucanase to produce isomaltose. |
