abstract The present invention relates to the use of a gardenin which is useful as a flavoring agent for food grade flavoring compositions. Gardenia can form a network structure by crosslinking with an amine group on the perfume molecule, and coating the fragrance composition to slowly release the aroma. Such perfume compositions are capable of retarding and avoiding the loss of aroma of the perfume during thermal processing or storage.
