abstract |
The present invention provides a bean fermented extract obtained by the following steps: soaking beans in water and autoclaving to form a legume matrix. After the legume substrate is cooled, Bacillus subtilis is added for fermentation to obtain a fermentation product. Finally, the fermentation product is subjected to an extraction process to obtain a supernatant, wherein the supernatant contains a bean fermentation extract, and the bean fermentation extract has anti-inflammatory activity. The present invention further provides a method and a composition for producing the aforementioned bean fermentation extract. |
