abstract |
The present invention relates to a method for preparing rice containing indigestible maltodextrin for inhibiting an increase in blood sugar. The method comprises the steps of: 1) washing raw rice, immersing the washed rice in water, dehydrating the impregnated rice, and filling the dehydrated rice into the container; 2) heating and sterilizing the rice filled into the container; 3) supplying cooking water to the rice-filled container and cooking the rice with steam, the cooking water containing an indigestible maltodextrin in an amount of 5.0 to 8.0 grams in terms of 210 grams of rice; and 4) sealing the rice . |
