abstract SUMMARY OF THE INVENTION An object of the present invention is to provide a novel powder containing nystose crystals which is suitable for fluidity of work and which suppresses powder flying and a method for producing the same. According to the present invention, there is provided a powder comprising a cane fruit tetrasaccharide crystal, wherein (a) the sugar cane tetrasaccharide content is 71 to 90% by weight, and (b) is 0.2 to 18.6 weight relative to the total weight of the cane fruit tetrasaccharide crystal. % gluconic acid, and (c) has a moisture content of 7 to 14% by weight. According to the present invention, there is provided a method for producing a powder containing cane tetrasaccharide crystals of the present invention, which comprises the steps of: (A) an enzyme comprising β-fructofuranosidase and glucose oxidase a step of reacting a solution with sucrose to form a sugar cane; (B) a step of converting glucose in the reaction liquid to gluconic acid by glucose oxidase; (C) obtaining the steps (A) and (B) a step of adjusting the gluconic acid content in the solution to 0.1 to 20% by weight; (D) a step of obtaining a sucrose tetrasaccharide crystal from the solution obtained in the step (C); and (E) adjusting the sugar cane obtained in the step (D) The step of the moisture content of the tetrasaccharide crystals.
