abstract |
An object of the present invention is to treat a color of a processed food containing an anthocyanin dye into a vivid color. In this case, it is desirable to use a high-safety and low-cost general food without adding a coloring agent, and to impart no odor to the food. The present invention relates to an anthocyanin-based pigment or a general processed food or drink containing an anthocyanin-based pigment, wherein an appropriate amount of a peptide is added in an amount of 5% by mass or more, an RNA content is 5% by mass or more, and a free amino acid content is 4%. Below %, a yeast extract having a food fiber content of 15% by mass or more is more preferable. |
