abstract This invention is a method for increasing protein digestibility of grains comprising steps of cooling down firstly after immersing grains into water and steam-boiling, then adding koji mixed by starch decomposing bacteria and yeasts into the grains, which have been completely cooled, to adequately mix the mixture, then placing the mixture into a fermentation container for fermentation, after fermentation is complete, distilling the mixture after the fermentation is complete so that it does not only obtain a grain liquor, but also allows the remained solid grain fermentation residue (distiller's grains) to be the finished product of elevating protein digestibility. According to this method, the grains are fermented after steam-boiling. The ethanol can be distilled and recycled to supply the market requirements, and the protein digestibility of the remained distiller's grains can be improved through fermentation to have effective utilization, save costs of additional products, and solve the huge amount of waste caused by the distiller's grains, thereby meets the green environmental issue that have drawn much attention in the world and fulfill the goal of sustainable operation.
