abstract This invention provides glyceride compositions and a manufacturing method thereof, in which the glyceride compositions contain less fatty acid ester of glycidyl esters and/or fatty acid ester of trichloropropane-1,2-diol. The invented manufacturing method of glyceride compositions includes a method to lower the content of fatty acid ester of glycidyl esters and/or fatty acid ester of trichloropropane-1,2-diol and a method to suppress generation of fatty acid ester of glycidyl esters and/or fatty acid ester of trichloropropane-1,2-diol. The invented manufacturing method of glyceride compositions is characterized in that the glyceride compositions are treated with deodorization process at 100-240 DEG Celsius, and the glyceride compositions contain at least one compound selected from a group composed of trichloropropane-1, 2-diol, fatty acid ester of trichloropropane-1, 2-diol, glycidyl esters, and fatty acid ester of glycidyl esters; and/or 3 mass % or more of diglyceride.
