abstract The present invention relates to a rice quality-improving agent, which comprises a gelatinized substance of acid treated waxystarch or a gelatinized substance of oxidized waxystarch, wherein the cold water solubility of the rice quality-improving agent in pure water at 25 DEG C is 50% and above, the amount of the granules left on the sieve with the mesh size of 0.5 mm (32 mesh) of the rice quality-improving agent is under 5% by weight, and the sum of the amounts of the above acid treated waxystarch and the above oxidized waxystarch, in relative to the total rice quality-improving agent, is 50% and above by weight.
