abstract | This yeast nutrition formula could provide nutrients for yeast fermentation and contains the following ingredients (in % dry weight): 40-75% nitrogen source, 15-25% phosphate source, 8-15% inorganic salts to provide metal ions required for yeast growth and 2-5% vitamins. This invention also provides fermentation preparation for white wine or alcohol using the above formula, which elongates the logarithm growth phase of yeast. For fermentation mashes deprived of nutrients, addition of the formula enables rapid growth of yeasts and enhanced fermentation. Thus the formula is a new supplement indispensible for wine industry and alcohol industry. |
